摘要
稳定同位素比质谱技术在产品质量控制和真实性鉴别方面被广泛应用。对稳定同位素比质谱仪的工作原理进行了简单介绍,综述了该技术在食醋、果汁饮料、酒类、蜂蜜和食用植物油等食品检验中的应用。
Stable isotope ratio mass spectrometry is widely used in product quality and authenticity identification.In this paper,the working principle of stable isotope ratio mass spectrometry is briefly introduced,and its application in coolers,juice drinks,alcohols,honey and edible oils are reviewed.
