摘要 功能性低聚糖是指由2~10个单糖通过糖苷键连接形成的直链或支链低度聚合糖。人体的唾液和胃肠道内没有水解功能性低聚糖的酶类,功能性低聚糖能直接进入大肠被有益菌利用,是人体肠道有益菌的益生因子。不同的功能性低聚糖具有多种生理功能,在婴幼儿食品、烘焙工业和饮料工业均有广泛的应用。本文对功能性低聚糖的最新应用进行概述,以期对功能性低聚糖相关产品的进一步研发提供指导。 Functional oligosaccharides are low-grade polysaccharides linked by 2~10 monosaccharides through glycoside bonds to form straight or branched chains.There are no enzymes hydrolyzing functional oligosaccharides in saliva and gastrointestinal tract of human body.Functional oligosaccharides can directly enter the large intestine and be utilized by beneficial bacteria,which is a probiotic factor of beneficial bacteria in human intestinal tract.Functional oligosaccharides have many physiological functions.They are widely used in infant food,baking industry,beverage industry.In this paper,the latest applications of functional oligosaccharides are summarized in order to guide the further development of functional oligosaccharides related products.
