摘要
徽州历来人杰地灵,文人商贾辈出。“吃”为日常之首,少不了格外讲究。源于徽州地理环境,其饮食自然离不开当地物产与饮食习俗,形成隶属徽州饮食文化派别———徽菜。为了原汁原味地还原徽州菜的精粹,实际考察了徽州地界人们的日常菜肴,从食材、采摘、料理、烹饪、装盘到宴席礼仪,以及如何形成一整套徽州饮食文化。尝试从美学角度解读徽州原住山民的饮食习俗审美特征,旨在展示博大精深徽州文化内涵的多样性。
Hui-zhou in Anhui province is the home to some of the best literati and businessmen.Eating,as the most important part of daily life,is considered to be very exquisitic.The unique Anhui cuisine is formed due to the geographical environment.To demonstrate the essence of the Anhui cuisine,a lot of researches have carried out on the daily dishes in Anhui province,from food materials to the process of picking ingredients,from cooking methods,preparation to the table manners,to further study how the unique food culture is formed.To show the diversity of Hui culture,the paper is trying to interpret the aesthetic characteristics of Anhui aborigines'diet custom aesthetically.
