不同苹果品种果皮、果肉多酚组分含量分析

摘要 以12个品种苹果为研究对象,对其果皮和果肉多酚含量进行测定,结果表明:果皮多酚含量花红最高达到513.67mg·kg-1(FW),124次之,果肉多酚含量齐早红最高达到190.81mg·kg-1(FW),龙红次之。所有苹果果皮的多酚含量明显大于果肉,果皮和果肉原花青素类含量最多。果皮当中羟基肉桂酸类含量最少,果肉当中花色苷类含量最少。通过对苹果组分含量分析,为多酚的开发利用提供参考。
