复合保鲜液对长白楤木嫩芽护色保鲜效果的研究 被引量:11

摘要 为了研究复合护色保鲜液对长白楤木嫩芽的贮藏效果,采用柠檬酸、VC、氯化钙和亚硫酸钠对长白楤木嫩芽进行浸泡处理,以失重率和感官评价为指标,通过单因素试验筛选出最佳护色保鲜液配方,并通过响应面试验得到长白楤木嫩芽复合护色保鲜液配方的最佳工艺组合为:1.5%柠檬酸+1.1%VC+0.7%氯化钙,以最佳复合保鲜液浸泡15 min处理长白楤木嫩芽,得到感官评分为(96.55±0.05)分,且复合保鲜液的保鲜效果明显优于单一保鲜液。在此配方下,该复合护色保鲜液能使长白楤木嫩芽色泽保持鲜绿,延长贮藏的货架期,对长白楤木嫩芽保鲜方面具有较好的应用价值。 In order to study the storage effect of the compound color protection and preservation liquid on Aralia continentalis Kitagawa sprouts,the citric acid,VC,calcium chloride and sodium sulfite are used for soak treatment of Aralia continentalis Kitagawa sprouts.Using weight loss rate and sensory evaluation as the indicators,the single factor test is used to select the best color protection and preservation liquid,and the response process test is used to obtain the optimal process combination of Aralia continentalis Kitagawa sprouts compound color protection and preservation liquid:1.5%citric acid+1.1% VC+0.7% calcium chloride,with the best compound preservation liquid soaking for15 minutes to treat Aralia continentalis Kitagawa sprouts,and the sensory score is 96.55±0.05,and the preservation effect of the compound preservation liquid is significantly better than that of single preservation liquid.Under the formula,the compound color protection and preservation liquid can keep the fresh green color of Aralia continentalis Kitagawa sprouts,prolong the storage shelf life,and have a better application value in keeping freshness of AraliacontinentalisKitagawa sprouts.
