摘要 我国鱼类产量巨大且鱼类加工业获得了长足的发展,以鱼类为原料生产的产品深受消费者的喜爱,此时鱼类加工技术的发展显得尤为重要。文章综述了鱼类产品的冷冻加工技术、鱼糜制品加工技术、干制品加工技术、腌制品加工技术、熏制品加工技术、罐制品加工技术等技术的研究与应用,并且鱼类的一些下脚料可以制作成动物饲料加以再利用,鱼类制成的休闲食品的开发具有很好的发展前景。 China has a huge output of fish and fish processing industry has made a great progress.The products made from fish are very popular with consumers,at this time,the development of fish processing technology is particularly important.The research and application of frozen processing technology of fish products,processing technology of surimi products,processing technology of dried products,processing technology of pickled products,processing technology of smoked products,processing technology of canned products and so on are reviewed in this paper,and some scraps of fish can be made into animal feed and reused,the development of leisure food made from fish has a good development prospect.
