摘要
双乙酰是啤酒发酵时产生的一种非常重要的发酵副产物,也是判断啤酒是否成熟的重要标准。文章主要是对低双乙酰酿酒酵母的复合诱变选育进行探索研究,通过进行诱变选育来选择双乙酰值比较低的啤酒酵母菌株,并用于啤酒的酿造,使双乙酰值能够符合标准。
Diacetyl is a very important fermentation by-product produced during beer fermentation,and it is also an important standard to judge whether the beer is mature or not.The main purpose of this paper is to explore the compound mutagenesis breeding of low diacetyl saccharomyces cerevisiae,select the beer yeast strain with relatively low diacetyl value through mutagenesis breeding,and use it in beer brewing,so that the diacetyl value can meet the standard.
