响应面法优化复合酶法制备人参膳食纤维 被引量:2

Optimization of Compound Enzymatic Method for Preparation of Ginseng Dietary Fiber by Response Surface Method

摘要 以人参残渣为原料,通过单因素试验和响应面试验研究了加酶量、料液比、粒度、酶解时间以及用纤维素酶、半纤维素酶对提取人参渣中不可溶性膳食纤维的影响,确定出酶解的最佳条件:人参渣粉碎,过40目筛,按料液比1∶15(g/m L)与蒸馏水混合,调p H至4.8,加入2%的纤维素酶,于50℃恒温酶解1 h;再调节p H至4.8,加入2%的半纤维素酶,于50℃酶解1 h。在此条件下,人参渣膳食纤维提取率为67.57%。 Using ginseng residue as raw material,the effects of enzyme amount,ratio of material to liquid,particle size and enzymatic hydrolysis time on the extraction of insoluble dietary fiber from ginseng residue were studied by single factor test and response surface test.The optimum conditions of enzymatic hydrolysis were determined as follows:ginseng residue crushing,passing 40 meshes sieve,mixing with distilled water at 1∶15(g/m L)according to the ratio of material to liquid,adjusting p H to 4.8,adding 2%cellulose,and using enzymatic hydrolysis at 50℃for 1 h;The p H was adjusted to 4.8,and 2%hemicellulase was added and hydrolyzed at 50℃for 1 h.Under these conditions,the extraction rate of dietary fiber from ginseng residue was 67.57%.
