三都辣椒酸特征指标的研究

Study on Characteristic Indicators of Capsicum Acid of Sandu

为了研究三都辣椒酸的指标状况,本试验对三都辣椒酸的生产路线和理化指标进行研究。利用高效液相色谱法研究了3种三都辣椒酸中的有机酸,有机酸标准曲线的相关系数在0.9985~0.9996,回收率在93.5%~98.6%,该方法的重复性好,准确度高,为后续更新优化辣椒酸的发酵工艺提供了理论依据和技术支持。

High performance liquid chromatography(HPLC)was used to study the types and contents of organic acids in three kinds of Sandu capsaicin.The correlation coefficient of organic acid standard curve was 0.9985~0.9996,and the recovery rate was 93.5%~98.6%.The method has good repeatability and high accuracy,which provides theoretical basis and technical support for the subsequent updating and optimization of the fermentation process of capsaicin.
