摘要
国内外目前获批的新食品原料中,食用菌有5种,分别是姬松茸、灵芝、猴头菇、蛹虫草、双孢蘑菇;提取物仅有β-葡聚糖(来源于香菇菌丝体、灵芝子实体)和氨基葡萄糖(来源于双孢蘑菇或者黑曲霉菌丝体)2种。本文通过对食用菌及其提取物在国内外新食品原料的批准情况进行综述和展望,以期为食用菌及其提取物在食品研发方面的应用提供思路和借鉴,为食用菌及其提取物在功能性食品中的广泛应用提供基础。
Currently,there are 5 kinds of edible fungi was approved as novel food at home and abroad,including Agaricus blazei,Ganoderma lucidum,Hydnum erinaceus,Cordyceps militaris,and Agaricus bisporus.The approved novel food of fungi extracts only includeβ-glucan(derived from the mycelium of Lentinula edodes,the fruiting body of Ganoderma lucidum)and Glucosamine(derived from Agaricus bisporus,the mycelium of Aspergillus niger).This article summarizes and looks forward to the approval of edible fungi and their extracts in novel food at home and abroad,providing ideas and examples for the food R&D level for edible fungi and their extracts,and to provide a basis for the wide application of edible fungi and their extracts in functional foods.
