摘要
用超高效液相色谱法建立了水果制品中的5-羟甲基糠醛的测定条件,以甲醇∶水=8∶92(v∶v)为流动相,284 nm紫外检测,5-羟甲基糠醛浓度在0.138~27.529μg·mL-1范围内,该方法具有良好的线性关系,其相关系数为0.99993,回收率91.42%~97.15%。通过检测发现本文选择的几种水果制品中百里果糕、酸角糕、半边梅、柠檬片中5-HMF的含量相对较高。
A UPLC method for determination of 5-HMF in fruit products was estabilished.Serving methanolwater(8∶92)as a mobile phase at a flow,The detection wavelength was set at 284 nm,This method presented a good linear relationship in the range of 0.138~27.529μg·mL-1 and the correlation coefficient is 0.99993.The recovery under this condition was 91.42%~97.15%.By detecting several fruit products,the 5-hydroxymethylfurfural content was significantly different.The content of 5-hydroxymethylfurfural in Passiflora edulis,Tamarindus indica,Preserved plum and lemon dry slice is relatively high.
