咸丰和当阳地区鲊广椒细菌群落结构差异性研究 被引量:5

摘要 采用Illumina Mi Seq高通量测序技术对咸丰地区鲊广椒细菌群落结构进行解析,同时结合之前研究报道的当阳地区鲊广椒样品分析数据,探究不同地区鲊广椒菌群结构的异同。结果表明,咸丰地区鲊广椒优势细菌门为硬壁菌门(Firmicutes)、变形菌门(Proteobacteria)和放线菌门(Actinobacteria),优势细菌属为乳酸杆菌属(Lactobacillus)、片球菌属(Pediococcus)、假单胞菌属(Pseudomonas)、棒状杆菌属(Corynebacterium)、盐单胞菌属(Halomonas)和明串珠菌属(Leukonostoc)。其细菌的丰度和多样性均极显著高于当阳地区(P<0.01),同时,一些低丰度的菌群在两个地区的样品中存在显著差异(P<0.05),乳杆菌属和片球菌属为主要优势菌属和核心菌属。此外,两地区鲊广椒中均广泛分布有肠杆菌属(Enterobacter)、克雷伯氏菌属(Klebsiella)和芽孢杆菌属(Bacillus)等致病共栖菌。相关性分析结果表明,鲊广椒发酵菌群彼此间存在密切的相关关系,其制作和生产需要多种微生物的协调作用。 The bacterial community structure of Zhaguangjiao(a fermented pepper)in Xianfeng region was analyzed by Illumina MiSeq high-throughput sequencing technique.At the same time,through combining the data from previous studies on the sample analysis of fermented pepper,the similarities and differences of the bacterial community structure of Zhaguangjiao in different regions were explored.The results showed that the dominant bacteria phyla of Zhaguangjiao in Xianfeng region were Firmicutes,Proteobacteria and Actinobacteria.The dominant bacteria genera were Lactobacillus,Pediococcus,Pseudomonas,Corynebacterium,Halomonas and Leukonostoc.The abundance and diversity of bacteria in Zhaguangjiao of Xianfeng were significantly higher than those in Dangyang(P<0.01),and the relative abundance of some low abundance bacteria genera were significantly different in the samples from the two regions(P<0.05).Lactobacillus and Streptococcus were the main dominant and core genera.In addition,Enterobacter,Klebsiella and Bacillus were widely distributed in Zhaguangjiao in Xianfeng and Dangyang regions.Correlation analysis showed that there were close correlations among the fermentation bacteria of Zhaguangjiao,and its production required the coordination of various microorganisms.
