和顺肉牛肉质性能研究 被引量:1

Study on Meat Quality Performance of Heshun Beef Cattle

摘要 以和顺肉牛为研究对象,通过屠宰试验测定其失水率、蒸煮损失、剪切力、pH、L(肉色亮度)、a(肉色红度)、b(肉色黄)以及脂肪酸、氨基酸、胆固醇、重金属、药物残留等指标,研究其肉质性能,为和顺肉牛的核心群选育标准提供技术与数据支持。结果表明,和顺肉牛肉质较嫩,营养丰富,重金属及药物残留符合标准,牛肉品质优良,营养丰富,质量达美国肉质标准。 Taking Heshun beef cattle as the research object,the water loss rate,cooking loss,shear force,pH,L(lightness),a(color redness),b(color yellowness),as well as fatty acid,amino acid,cholesterol,heavy metal and drug residues and other indicators were determined by slaughter test.The meat quality performance of Heshun beef cattle were explored to provide technical and data support for the core breeding standards of Heshun beef cattle.The result showed that meat quality of Heshun beef cattle was tender and nutritious,and heavy metals and drug residues met the standards.The quality of Heshun beef cattle was excellent and nutritious,reached the American meat quality standard.
