恩施富硒西兰花产品营养成分分析 被引量:3

摘要 富硒西兰花含有丰富的营养物质和活性成分,有机硒含量高,具有抗氧化、抗癌、抗肿瘤、提高免疫力等保健作用,可作为植物硒原料广泛应用于功能食品、医药、日化等工业生产。富硒西兰花是恩施富硒农业发展规模最大的高山蔬菜品种之一,本试验以恩施富硒西兰花为原料进行了应用开发初步研究与品质评价,结果表明,恩施富硒西兰花超微粉总硒含量高达211.2μg/100 g,有机硒占总硒含量的85.8%,且膳食纤维2.13 g/100 g、维生素C 68.1 mg/100 g、粗蛋白5.47 g/100 g、碳水化合物5.73 g/100 g,具有较高的营养价值和开发潜力;以恩施富硒西兰花超微粉为原料开发的饮料、营养餐及含片均可满足我国营养学会规定的成人日硒摄入量的最低要求,可作为科学补硒的优质产品。 Selenium enriched broccoli is rich in nutrients and active ingredients,and has high organic selenium content.It has the health care functions of antioxidant,anti-cancer and anti-tumor,and improving immunity.It can be widely used as plant selenium raw material in functional food,medicine,daily chemical and other industries.Selenium enriched broccoli is one of the largest mountain vegetable varieties in Enshi.The preliminary research and quality evaluation of selenium enriched broccoli were carried out in this experiment.The results showed that the total selenium content of selenium enriched broccoli was 211.2μg/100 g,organic selenium accounted for 85.8%of the total selenium content,dietary fiber 2.13 g/100 g,vitamin C 68.1 mg/100 g,crude protein 5.47 g/100 g,carbohydrate 5.73 g/100 g,with high nutritional value and development potential.Using Enshi selenium enriched broccoli superfine powder as raw materials to develop drinks,nutrition meals and lozenges can meet the minimum requirement of adult daily selenium intake stipulated by the nutrition society of China,and can be used as high-quality products for scientific selenium supplement.
