Formation of Odors and Deodorization Methods of Chinese Angelica

当归作为药食同源的中药材在生活中广泛应用,但因特殊气味使其在食材上的应用受到了限制。通过查阅近年来关于当归气味形成与除味方法的研究文献,本文对当归气味的形成、提取及去除方式等进行了综述,以期阐明其化学成分与气味之间的关系,探索当归特殊气味的分离和去除方法,为当归药食同源利用途径的拓宽提供参考。

As a kind of traditional Chinese medicine,Chinese angelica(CA)is widely used in daily life,but its application in food is limited because of its special smell.By referring to the research literature on the formation and deodorization of CA in recent years,the paper reviewed the formation,extraction and removal of the odor of CA in order to clarify the relationship between the chemical components and the odor,and explored the separation and removal methods of the special odor of CA,so as to provide help for the application and development on substance for both medicine and food of CA.
