Difference and Comprehensive Evaluation of Fruit Nutritional Quality of Different Grape Varieties

摘要 为探究不同葡萄品种果实中主要营养成分含量特征及营养品质差异,建立葡萄果实营养品质综合评价方法,以15个鲜食葡萄品种为对象,通过主成分分析和逐步线性回归分析,对果实15个营养品质指标进行了比较分析和综合评价。结果显示,不同葡萄品种间各营养指标含量差异明显,其中苹果酸和总酚含量差异最大;主成分分析提取了6个主成分因子,累积贡献率达87.689%;综合评价结果表明阳光玫瑰、魏可和金手指的综合营养品质较高,藤稔、巨峰和京亚的综合营养品质较差;建立了葡萄营养品质评价回归模型Z=-4.012+0.056X 5+0.018X 6+0.009X 8+0.729X 11,方程决定系数R 2=0.989,筛选出影响葡萄营养品质的4个单项指标:固酸比、糖酸比、果糖和苹果酸。 In order to explore the main nutrient content characteristics and nutritional quality differences in different grape varieties,establish a comprehensive evaluation method for grape fruit nutritional quality,taking 15 table grape varieties as the object,we collected the values of 15 nutritional quality indicators.Principal component analysis and step linear regression analysis were used to make comparative analysis and comprehensive evaluation of 15 nutritional quality indicators.The results showed that there were obvious differences in the content of different quality indicators of different grapes,among which the differences in malic acids and total phenols were the largest.Six principal component factors were extracted by principal component analysis,and the cumulative contribution rate reached 87.689%.The comprehensive score showed that Shine Muscat,Wink and Gold Finger had better nutritional quality,while the quality of Fujiminori,Kyoho,and Jingya were relatively poor.The regression model for grape nutritional quality evaluation was established as follows:Z=-4.012+0.056X 5+0.018X 6+0.009X 8+0.729X 11.Coefficient R 2=0.989.The four single indicators affecting the nutritional quality of grapes including solid-acid ratio,sugar-acid ratio,fructose,and malic acid were screened.
