Discussion of Honey Adulteration Situation and Effective Identification Methods

本文针对目前蜂蜜营养价值高、市场缺口较大带来的蜂蜜掺假现象进行论述。包括常见的蜂蜜掺假手段,蜂蜜掺假鉴别的传统方法和现行方法。指出运用化学计量学联合仪器分析方法进行多仪器联合测定、多方法辅助的研究思路的优势,提出完善蜂蜜数据库、建立蜂蜜鉴别标志物数据库辅助蜂蜜掺假鉴别的方法。

Honey adulteration phenomenon caused by the current high nutritional value of honey and the large market gap was described in this article. Common honey adulteration methods and effective methods for identifying honey adulteration were introduced. The research idea of using multi-instrument analysis combined with chemometrics assisted method is proposed. It is also suggested to improve the honey database and establish a honey identification marker database to assist honey adulteration identification.
