摘要
近年来,食物蛋白源酶解肽促进肠道钙吸收的功效引起研究者们的关注,其中最早发现的是牛奶蛋白来源的酪蛋白磷酸肽,此外,研究者们还发现了其他食物蛋白来源的具有促钙吸收活性的肽,如:卵黄高磷蛋白磷酸肽、乳清蛋白酶解肽、鱼鳞蛋白酶解肽及大豆蛋白酶解肽等。本文将对这些具有促钙吸收活性的食物蛋白源酶解肽的研究进展进行阐述,并对其今后研究方向做了展望。
In recent years,the effect of food protein-derived enzymatic peptides to promote intestinal calcium absorption has attracted the attention of researchers.Among them,the casein phosphopeptide derived from milk protein was first discovered.In addition,the researchers also discovered peptides with calcium absorption promoting activity from other food protein sources,such as:phosvitin phosphopeptides,whey protein hydrolyzed peptide,fish scale proteolytic peptides and soybean proteolytic peptides.This article will describe the research progress of these food protein-derived enzymatic peptides with calcium absorption-promoting activity,and prospects for their future research directions.
