摘要
针对芝麻油氧化稳定性问题,综述了植物油氧化机理、氧化稳定性评价方法及芝麻油氧化稳定性的研究进展,旨在为提高芝麻油在生产贮藏中的氧化稳定性提供参考。
To illustrate the problem of oxidative stability of sesame oil,this article summarized the oxidative mechanisms of vegetable oils,evaluation method of its oxidative stability and the research progress about oxidative stability of sesame oil,the purpose was to provide references for improving oxidative stability of sesame oil during processing and storage.
