摘要
本研究以木糖醇为主要原料,经粉碎混合、造粒烘干、整粒干燥等工艺制备木糖醇固体饮料。确定产品的最佳配方为:木糖醇添加量80%,麦芽糊精添加量10%,羧甲基纤维素钠添加量1.5%,柠檬酸添加量0.6%,苹果酸添加量0.6%,阿斯巴甜添加量0.1%,并辅以相对应的风味香精及果汁粉。制备的产品外观呈颗粒状,溶于水后溶液质地均匀,即冲即饮,具有携带方便、容易贮存等特点。
In this study,xylitol was used as the main raw material to produce a solid xylitol beverage through pulverization and mixing,granulation drying,and granulation drying.The best formula to determine the product is 80%xylitol,10%maltodextrin,1.5%sodium carboxymethyl cellulose,0.6%citric acid,0.6%malic acid,spartame is added at 0.1%,supplemented with corresponding flavor essence and fruit juice powder.The prepared product has a granular appearance,and the solution has a uniform texture after being dissolved in water,and it is ready to drink and has the characteristics of convenient carrying and easy storage.
