摘要
通过对鱼胶产品的透明质酸和糖胺聚糖含量的测定,以及探究在不同湿度下其吸湿性和保湿性,为鱼胶产品以后在实际生产中的应用提供数据支持。结果表明,不同品种鱼胶所含有透明质酸含量不同,黄花鱼和红鱼最高,其余鱼胶内透明质酸含量从大到小依次为:石斑鱼、石首鳘鱼、新西兰鳕鱼、冰岛鳕鱼、赤嘴鱼。不同品种鱼胶所含有糖胺聚糖含量从大到小依次为石斑鱼、红鱼、新西兰鳕鱼、黄花鱼、石首鳘鱼、冰岛鳕鱼、赤嘴鱼。不同品种的鱼胶在不同的湿度下,其保湿性和吸湿性各有差异。
To determine the hyaluronic acid and glycosaminoglycan content of fish gelatin products,and explore its hygroscopicity and moisture retention under different humidity,so as to provide data support for the application of fish glue products in actual production.Results:the contents of hyaluronic acid in different kinds of fish glue were as follows:yellow croaker and red croaker were the highest.The order of hyaluronic acid content in other fish gelatin was grouper,grouper,New Zealand cod,Icelandic cod and red billed fish.The content of glycosaminoglycan in different fish gelatins from high to low was grouper,red fish,New Zealand cod,yellow croaker,grouper,Icelandic cod and red billed fish.The moisture retention and hygroscopicity of different kinds of fish glue are different under different humidity.
