摘要
为枸杞蛋白的深加工及生物活性肽的制备提供参考,采用单因素试验及正交试验,对碱提酸沉法提取枸杞蛋白的工艺条件进行优化。结果表明:枸杞蛋白的最佳提取条件为液料比10mL/g、水浴时间2.5h、水浴温度45℃,该条件下的枸杞蛋白得率为14.2%。
The process conditions for extracting Lycium barbarum protein by alkali extraction and acid precipitation method are optimized by single factor test and orthogonal experiment to provide a reference for deep-processing of L.barbarum protein and preparation of bioactive peptides.Result:The optimal conditions for extracting L.barbarumprotein include 10 mL/g of liquid-material ratio,2.5 hwater bath time with 45℃water.The yield of L.barbarumprotein under the optimal condition is 14.2%.
