摘要 使用山梨糖醇、三氯蔗糖、硬脂酸镁、食盐等为原料,通过单因素试验和正交试验得到最优配比并采用压片工艺制得含盐压片糖果。试验得出含盐压片糖果的最优配方为:山梨糖醇97%、三氯蔗糖0.1%、食盐1.0%、硬脂酸镁0.3%、柠檬酸1.6%,此配方组成条件下制得的含盐压片糖果表面光滑、口感酸甜可口且健康,具有良好的市场前景。 Using sorbitol,sucralose,magnesium stearate,salt,as raw materials,through single factor experiment and orthogonal experiment to obtain the optimal ratio,and adopt the tableting process to make salt-containing tablet candy.The test shows that the optimal formula of salt-containing tableted candy is 97%sorbitol,0.1%sucralose,1.0%salt,0.3%magnesium stearate,and 1.6%citric acid.The salt-containing tableted candy has a smooth surface,sweet and sour taste and healthy taste,which has a good market prospect.
