燕窝是一种享有盛名的优质功能食品,由于供不应求,导致价格昂贵。受经济利益的驱使,市场上燕窝的质量参差不齐,假冒伪劣现象严重。为了实现对燕窝质量的有效监督,燕窝真伪鉴别检测技术处于不断的发展与创新中。该文综述了燕窝掺假的鉴别方法,包括理化鉴别、色谱与光谱鉴别、分子生物学鉴别及其他鉴别方法,为后续燕窝真伪鉴别研究提供参考。

Edible bird′s nest(EBN)is a prestigious and superior functional food.It is expensive due to its limited supply and enormous demand.While,with driven by economic,many fake products are available in the market,the quality of EBN in the market is uneven,and the phenomenon of counterfeiting and shoddy is serious.In order to real⁃ize the effective supervision of the quality of EBN,the authenticity detection technology of bird′s nest is in continu⁃ous development and innovation.This review summarizes the identification methods for adulteration of EBN includ⁃ing physical and chemical identification,chromatographic identification,molecular biological identification,and oth⁃er identification methods,which could provide a reference for the research on authenticity of EBN.
