摘要
雪茄烟是一种香气浓厚,风味独特的烟草制品。随着我国经济不断发展和人民生活水平的不断提高,越来越多的人开始接触并享受雪茄。然而由于种种原因,国产优质雪茄原料的匮乏成为阻碍我国雪茄烟产业健康发展的关键因素。发酵能够改善烟叶品质,提升烟叶可用性,是解决国产优质雪茄原料短缺的重要途径。本文通过阐述雪茄烟发酵的机理,发酵对内在品质的影响,影响雪茄烟发酵的因素以及现有的发酵技术,对雪茄烟之后发酵研究的方向和前景进行了探讨和总结。
Cigar is a kind of tobacco product with strong aroma and unique flavor.With the continuous development of China's economy and the continuous improvement of people's living standards,more and more people have begun to contact and enjoy cigars.However,due to various reasons,the shortage of domestic high-quality cigar raw materials has become a key factor hindering the healthy development of China's cigar industry.Fermentation can improve the quality of tobacco leaves and the availability of tobacco leaves.It is an important way to solve the shortage of domestic high-quality cigar raw materials.This article describes the mechanism of cigar fermentation,the influence of fermentation on intrinsic quality,the factors affecting cigar fermentation,and the existing fermentation technology.Finally,the research direction and prospect of cigar fermentation are discussed.
