摘要 茶多酚是一种天然的抗氧化剂、保鲜剂和食品添加剂,具有绿色、健康、安全的特性。文章介绍了茶多酚的特性,茶多酚在油脂、肉制品、水产品、果蔬、功能食品、饮料等产品中的应用,以及茶多酚的保健、除臭、护色和运动员体能恢复等方面的效果,并展望了茶多酚应用前景。 Tea polyphenol is a kind of natural antioxidant,preservative and food additive,which has the characteristics of green,health and safety.This paper introduced the characteristics of tea polyphenols,the application of tea polyphenols in oil,meat products,aquatic products,fruits and vegetables,functional foods,drinks and other products,as well as the effects of tea polyphenols on health care,deodorization,color protection and athletes'physical fitness recovery.The application prospect of tea polyphenols was also prospected.
