摘要
以13个藜麦品系为研究对象,通过田间试验和胁迫试验,研究Pb、Cd在藜麦中的积累与分布,筛选出较低污染品系和部位,为藜麦食品加工提供参考。结果表明:Pb、Cd主要积累在藜麦的根、茎、叶中,含量范围为0.17~0.76 mg/kg、0.10~0.70 mg/kg;果实中Pb、Cd含量相对较低,分别为0.10~0.29 mg/kg、0.08~0.21 mg/kg。藜麦中Pb、Cd的含量与环境中Pb、Cd浓度呈显著正相关。藜麦易受环境中重金属的影响,在选择藜麦为食品加工原料时,建议优先考虑使用Pb、Cd含量较低的果实部位。选用藜麦果实进行产品加工时,可以考虑选用同时具有较低Pb、Cd含量的品系18QS-13、18QS-21和LL1,并在后续加工中注意对重金属的消减。
In order to select lower contamination strains and parts for quinoa food processing,the accumulation and distribution of Pb and Cd in quinoa were studied by field experiment and stress test on 13 strains of qunioa,and the results showed that Pb and Cd were mainly accumulated in the root,stem and leaf of quinoa.The contents range was 0.17~0.76 mg/kg and 0.10~0.70 mg/kg,respectively.The contents of Pb and Cd in fruits were relatively low,0.10~0.29 mg/kg and 0.08~0.21 mg/kg,respectively.The contents of Pb and Cd in quinoa were significantly positively correlated with the concentration of Pb and Cd in the environment.Quinoa is susceptible to heavy metals in the environment.When choosing quinoa as a food processing ingredient,the fruits with lower Pb and Cd contents should be given priority.When choosing fruits for product processing,we can consider choosing 18QS-13,18QS-21 and LL1 with lower Pb and Cd contents at the same time,and need to pay attention to the reduction of heavy metals in subsequent processing.
