摘要
酸菜羊肉粉作为民间特色美食,深受广大的消费者喜爱,然而其产业化发展之路仍任重而道远。从产品消费、烹调工艺、选料差异等方面,论述了酸菜羊肉粉产业的加工现状,分析了羊肉粉产品加工过程中科技支撑、产品质量、食品安全及产业化发展等方面存在的不足;针对上述不足,从产品质量、市场需求、营销模式等方面提出了解决方案,同时对羊肉粉产业发展趋势进行了探讨和预测。
The lamb meal with sauerkrautwas taken as featured delicious food,and it was popular among consumers,however,there was still a long way to go for its industrialization.The processing status of lamb meal with sauerkraut industry was discussed from the aspects of product consumption,cooking technology and material selectiondifference.The deficiencies of scientific and technological support,product quality,food safety and industrial development in lamb meal processing were analyzed.In view of the above deficiencies,solutions were put forward from the aspects of product quality,market demand and marketing mode.At the same time,the development trend of lamb meal industry was discussed and predicted.
