西藏不同地区蜂蜜的理化指标及营养成分分析 被引量:1

摘要 为了解西藏不同地区蜂蜜的营养价值,该研究参照国家的相关标准方法测定西藏不同地区蜂蜜的理化指标及营养成分。结果显示,西藏江孜县和乃东区西蜂蜜的水分含量、酸度和淀粉酶值远优于国家标准,还原糖含量在80 g/100 g左右,蛋白质含量0.32%~0.28%,含有11种维生素。此外,江孜县西蜂蜜比乃东区的好,初步判断高海拔地区西蜂蜜的营养价值更高。波密县中蜂蜜的主要理化指标也优于国家标准,蛋白质含量高,维生素丰富,其中波密县1中的维生素B2含量为0.32 mg/100 g,初步推断在西藏地区活框饲养所产的中蜂蜜质量相对更好。西藏西蜂蜜和中蜂蜜主要理化指标质量高,营养成分丰富,表明西藏蜂蜜具有开发成优质蜜的潜力,并有望成为西藏又一大特色产品。 In order to study the nutritional values of honey in different regions of Tibet.The physicochemical properties and nutritional compositions of honey were determined based on interrelated national standards in this study.The results showed that moisture,acidity and amylase of Apis mellifera honey in Gyangzêcounty and Naidong?district were exceed the national standards.Of the two Apis mellifera honey,the reducing sugar was about 80g/100g,protein content between 0.32%-0.28%and vitamins have 11 kinds.Otherwise,the Apis mellifera honey in Gyangzêcounty was better than Naidong district,so it is preliminarily demonstrated that the nutritional value of Apis mellifera honey in high altitude was better.The main physicochemical properties of Apis cerana honey in Bomêcounty were also superior to the national standards,and Apis cerana honey also with high protein and rich vitamins.Among vitamins,vitamins B2 content was 0.32mg/100g in Bomêcounty 1,so it is preliminarily concluded that the quality of Apis cerana honey produced by live frame breeding in Tibet is relatively better.The main physicochemical properties of Apis mellifera honey and Apis cerana honey in Tibet were high quality and there’re also rich in nutrients,which indicates that Tibet honey has the potential to develop into high-quality honey and is expected to become another characteristic product in Tibet.
