河蚬抗氧化肽-锌螯合物抗氧化活性的研究 被引量:1

Antioxidant Activity of Zinc-Binding Antioxidant Peptides from Corbicula Fluminea Hydrolysate

摘要 研究了河蚬抗氧化肽-锌螯合物体外抗氧化能力,以Vc为阳性对照,选用·OH清除率、DPPH·清除率、ABTS+·清除率、O2-·清除率、还原力及对油脂的抗氧化性6种方法,并将其与河蚬抗氧化肽进行比较。结果表明:河蚬抗氧化肽-锌螯合物对4种自由基有一定的清除能力,对·OH、DPPH·、O2-·和ABTS+·的IC50分别为1.44、1.93、3.20 mg/mL和2.26 mg/mL,具有一定的还原力,对猪油及芝麻油的氧化均有抑制效果,且河蚬抗氧化肽-锌螯合物的体外抗氧化活性高于河蚬抗氧化肽,为其在抗氧化活性方面的应用提供理论依据。 In this paper,the antioxidant activity of zinc-binding antioxidant peptides from Corbicula fluminea hydrolysate was studied.Vc was used as the positive control.The scavenging rate of·OH,DPPH·,ABTS+·,O2-·,reducing power and antioxidant ability to grease were used as the index of investigation and the result was compared with the result of antioxidant peptides of Corbicula fluminea.The results showed that:zinc-binding antioxidant peptides from Corbicula fluminea hydrolysate had certain scavenging ability to four kinds of free radicals,the IC50 of·OH,DPPH·,O2-·and ABTS+·were 1.44 mg/mL,1.93 mg/mL,3.20 mg/mL and 2.26 mg/mL,respectively.It had certain reducing power and could inhibit the oxidation of lard and sesame oil.The antioxidant activity of zinc-binding antioxidant peptides from Corbicula fluminea hydrolysate was higher than that of antioxidant peptides of Corbicula fluminea.It provided a theoretical basis for its application in antioxidant activity.
