摘要
柚子皮渣是柚子的加工副产物,其中含有丰富的果胶。文章对国内外果胶原料、结构及提取方法进行综述,发现柚子皮比其他原料来源的果胶含量更高,得到的果胶具有特有的结构特性、分子质量小、甲氧基酯化度高、乳化性能好;比较不同的柚子皮果胶提取方法,发现酶辅助提取果胶得率高,提取方法简单、成本低廉,得到的果胶糖链分支化程度高,生物活性物质含量高、结构稳定。柚子皮渣是优质果胶的良好来源,酶法辅助提取柚子皮果胶具有高效、产品性质好、环境友好等优点,为柚子皮渣果胶的提取提供了参考。
Pomelo peel residue contained abundant pectin is a by-product of pomelo processing.In this study,pectin’s raw material,structure,and methods of extraction were carried out.Through the review,we found pomelo peel pectin is more contained in pomelo peel than other common materials,and is smaller molecular weight,higher degree of esterification,better emulsification.Comparing to different extraction methods,enzymes assisted extraction could products more pectin,cost less and simple,in addition,the obtained pectin has high branching degree,high content of bioactive substance and stable structure.Pomelo peel residue is a good source of high-quality pectin.Enzymes assisted extraction has the advantages of high efficiency,good product property and friendly environment.This article provides a reference for the extraction of pomelo peel residue pectin.
