摘要
白酒中的酸类物质主要由有机酸组成,是赋予酒体香气的重要成分,以乙酸、乳酸、己酸、丁酸等为主。根据GB/T10345-2007《白酒分析方法》中测定白酒中总酸含量的方法,找出影响测量结果不确定度的各种因素,对检测结果的不确定度进行评定,可为实验室在该检测过程中进一步提高检测数据的可靠性。
The acids in liquor are mainly composed of organic acids,which are the important components to give liquor aroma,mainly acetic acid,lactic acid,hexanoic acid,butyric acid,etc.In this paper,total acid in liquor was determined with the GB/T10345-2007(Methods of analysis for Chinese spirits),various factors affecting the uncertainty of measurement results were found out,and the uncertainty of test results was evaluated,which could further improve the reliability of test data in the laboratory during the test process.
