摘要
为研究新型生姜抑芽技术,获得较为理想的安全抑芽产品,以不进行抑芽处理为对照,研究3-癸烯-2-酮、薄荷精油、氯苯胺灵(Chlorpropham,CIPC)对25℃下贮藏期内生姜的抑芽效果。结果表明:使用0.010 mol/kg FW的3-癸烯-2-酮以及等体积的薄荷精油和CIPC对生姜进行熏蒸处理后于25℃贮藏12 d时,3-癸烯-2-酮的抑芽效果优于薄荷精油,与CIPC相似,处理姜块发芽率为14.7%,CIPC处理组的发芽率为13%。对生姜的主要功能成分6-姜酚含量进行测定,发现3-癸烯-2-酮处理后姜块中6-姜酚含量比对照略有提高,说明3-癸烯-2-酮在抑制生姜发芽的同时对生姜的主要功能成分无不良影响。因此,3-癸烯-2-酮可以作为生姜潜在的采后抑芽剂。
In order to develop new sprouting inhibitory technologies and obtain ideal safe products for suppressing ginger sprouting,the inhibitory effect of 3-Decen-2-one,peppermint oil and chlorpropham(CIPC)on sprouting of ginger stored at 25℃were studied with no treatment group as control.The ginger roots were fumigated with 0.010 mol/kg fresh weight(FW)of 3-Decen-2-one,same volume of peppermint oil and CIPC,respectively and then stored at 25℃.The results showed that on the day 12 of storage,both sprouting inhibitory effect of 3-Decen-2-one and CIPC treatments were better than that of peppermint oil treatment.The sprouting rate of ginger fumigated with 3-Decen-2-one and CIPC were 14.7%and 13%,respectively.After fumigation with 3-Decen-2-one,it was found that the content of 6-gingerol,the main functional component in ginger was slightly higher than that of the control,indicating 3-Decen-2-one had no negative effect on the main ginger functional component while inhibiting ginger sprouting.Therefore,3-Decen-2-one can be used as a potential ginger sprouting inhibitor.
