Research Progress in the Synthesis of Nano-Selenium Based on Food Materials

摘要 硒是人类所必需的微量元素,然而我国硒资源分布不均,近70%为缺硒地区,因此补硒变得尤为重要。纳米硒是一种纳米尺寸的零价态硒,具有更低的毒性和较高的生物活性。近年来,以食品原料天然合成纳米硒的研究被广泛关注,且制备成本低、合成效果好,被用于抑制癌细胞增殖、体外抗氧化等潜在治疗,是制备医疗或可食用纳米硒的最佳选择。对近年来基于食品原料合成纳米硒的制备条件、纳米硒形态及其生物活性进行综述,为纳米硒的天然合成及补硒营养剂的开发提供思路。 Selenium is a necessary trace element for human beings.However,the distribution of selenium resources in China is uneven,and nearly 70%of land areas are selenium-deficient.So,selenium supplementation becomes an important issue.Nano-selenium is a nano-sized selenium with zero-valent,and it has the low toxicity and the high biological activity.Recently,the researches on the natural synthesis of nano-selenium using food materials have been widely concerned,because this method is low-cost and has the high synthesis efficacy.Nano-selenium has been applied in inhibiting the proliferation of cancer cells and anti-oxidation based on its various bio-functionalities.This article reviews the preparation conditions,morphology,and biological activity of nano-selenium based on food materials in the last few years,and provides ideas for the natural synthesis of nano-selenium and the development of selenium supplements.
