梵净山仿野生栽培猴头菇主要营养成分分析与评价 被引量:3

Analysis and Evaluation of Primary Nutritional Components of WildSimulated Hericium erinaceus Cultivated in Fanjing Mountain

摘要 以添加富硒土人参的基质栽培的梵净山仿野生猴头菇作为试验组,以不添加作为对照组,采用国家标准方法及常用方法测定其主要营养成分,并对这2组猴头菇进行主要营养价值的评价。结果表明,试验组和对照组的猴头菇粗蛋白含量分别为5.54±0.02 g/100 g和4.75±0.09 g/100 g;总糖含量分别为22.6±0.84 g/100 g和24.58±0.02g/100 g;维生素C含量分别为0.16±0.02 g/100 g和0.15±0.01 g/100 g;粗脂肪含量分别为0.65±0.00 g/100 g和0.85±0.05 g/100 g。根据AAS和CS评分,试验组和对照组猴头菇的第一限制性氨基酸为蛋氨酸和胱氨酸,第二限制性氨基酸为苯丙氨酸和酪氨酸。2组猴头菇的氨基酸种类齐全,营养成分丰富,营养价值较高。不同基质培养的猴头菇营养成分的差异可为综合开发猴头菇资源提供科学依据。 The primary content of nutrition components of Wild-Simulated Hericium erinaceus cultivated in Fanjing Mountain was determined by the national standard method and the common method by using the experimental group and the control group,which were cultivated on the substrate supplemented with selenium-enriched Talinum paniculatum,and the blank group was used as the control group.The primary nutritional value of the two groups of Hericium erinaceus had been evaluated.The results showed that the data of Hericium erinaceus in experimental group and control group were as follows:crude protein content 5.54±0.02 g/100 g and 4.75±0.09 g/100 g,total sugar content 22.6±0.84 g/100 g and 24.58±0.02 g/100 g,vitamin C content 0.16±0.02 g/100 g and 0.15±0.01 g/100 g,crude fat content 0.65±0.00 g/100 g and 0.85±0.05 g/100 g,and crude fat content was very low.According to AAS and CS scores,methionine and cystine were the first limited amino acids,and phenylalanine and tyrosine were the second limited amino acids in the experimental group and the control group.The amino acids of the two groups of Hericium erinaceus were complete,the nutritive components were rich,and the nutritional value was high.The difference in nutrient composition of Hericium erinaceus in different culture methods could provide a scientific basis for comprehensive development of Hericium erinaceus resources.
