摘要 在食品中常见的有毒有害物质有很多,其中铅、镉、砷是非常重要的三种元素,在食品安全检测中,对砷的检测一般采用原子荧光分光光度法检测,对铅和镉的测定一般采用原子吸收分光光度计法检测。本文先介绍了ICP-MS主要技术原理及其应用要点,然后选择了小麦粉这种常见农作物作为具体研究对象,用ICP-MS方法对这种农产品进行铅、镉、砷含量检测,对比检验结果和国家相关标准,对小麦粉中的铅、镉、砷含量进行分析和评价。 There are many common toxic and harmful substances in food,Pb,Cd and As are undoubtedly the most important three elements.The detection of arsenic is generally detected by atomic fluorescence spectrometry,while the determination of lead and cadmium is generally detected by atomic absorption spectrophotometer.This paper first introduces the main technical principles and application points of ICP-MS,and then selects wheat flour as the specific research object,and uses ICP MS method to detect the contents of lead,cadmium and arsenic in this agricultural product the contents of Pb,Cd and As in wheat flour were analyzed and evaluated according to the test results and relevant national standards.
