摘要
牛乳中常见的生物活性物质是生物活性蛋白,生物活性肽和乳脂类物质,其中包括乳铁蛋白、免疫球蛋白、过氧化物酶、溶菌酶,乳蛋白源生物活性肽,不饱和脂肪酸等。这些活性物质受热处理方式的影响,具有热敏性。本文通过对牛乳中热敏性生物活性物质的功能特性、潜在应用及对不同热处理方式的热敏性展开讨论,旨在为乳制品加工工艺优化和质量安全控制提供理论参考。
The common bioactive substances commonly found in cow’s milk are bioactive proteins,bioactive peptides and lactic lipids,including lactoferrin,immunoglobulin,peroxidase,lysozyme and lactoprotein derived bioactive peptides,unsaturated fatty acids and so on.These bioactive substances are sensitive to various thermal treatment.This paper mainly discusses the functional characteristics,potential applications and thermal stability of common bioactive substances in milk,aiming to provide theoretical reference for the optimization of dairy processing technology and quality and safety control in dairy products.
