芝麻蛋白及挤压组织化蛋白的研究进展

摘要 芝麻蛋白营养丰富,富含大量人体必需氨基酸,主要来源于芝麻加工副产物——芝麻粕。对蛋白进行挤压膨化处理便可得到组织化蛋白。介绍了芝麻蛋白和挤压组织化蛋白两者的特点和应用,并对芝麻蛋白组织化研究的前景进行了展望,为后续芝麻蛋白加工提供了思路。 Sesame protein is rich in nutrition and contains a large amount of essential amino acids for human body.It is mainly derived from sesame meal,a by-product of sesame processing.The histochemical protein can be obtained by extruding the protein.The characteristics and applications of sesame protein and extruded histo-chemical protein were introduced,and the prospect of the research on the histochemical of sesame protein was prospected,which provided ideas for the subsequent processing of sesame protein.
