摘要
目的了解渭南市2017年市售食品中食源性致病菌的污染状况,及时发现食品中的安全隐患,为食品安全监督管理提供科学依据,防止食物中毒发生。方法按照《陕西省食品微生物及其致病因子监测工作手册》方法对10类食品进行单增李斯特氏菌、蜡样芽孢杆菌、金黄色葡萄球菌、沙门氏菌、小肠结肠炎耶尔森氏菌等10种食源性致病菌检测。结果237份样品共检出食源性致病菌24株,总检出率10.13%(24/237)。不同致病菌检出率单增李斯特氏菌最高,为5.24%(10/191);不同食品种类检出率散装熟肉制品最高,为25.71%(18/70);不同包装检出率散装(11.00%,23/209)高于定型包装(3.57%,1/28);不同采样场所检出率餐饮行业最高,为11.61%(13/112);不同采样区县检出率白水县最高,为11.11%(3/27);不同采样时间检出率第二季度最高,为16.67%(15/90)。结论渭南市2017年多种市售食品中存在不同食源性致病菌污染,相关卫生监管部门应加强监管。
Objective To understand the contamination status of food-borne pathogens in market food in Weinan in 2017,and timely discover the potential safety hazards in food in order to provide a scientific basis for food safety supervision and management and prevent food poisoning.Methods According to the Guide of Food Microbiology and its Pathogenic Factors Monitoring,a total of 10 kinds of food samples were selected for the detection of 10 types of food-borne pathogens,including Listeria monocytogenes,Bacillus cereus,Staphylococcus aureus,Salmonella,Yersinia enterocolitica and etc.Results A total of 24 food-borne pathogenic strains were detected from 237 samples,with a total detection rate of 10.13%(24/237).The detection rate of Listeria monocytogenes(5.24%,10/191)was the highest of all detected pathogens.The detection rate of pathogens in bulk cooked meat products(25.71%,18/70)was the highest in all detected food samples.The detection rate of pathogens in bulk food(11.00%,23/209)was higher than that of packed food(3.57%,1/28).The detection rate of pathogens in catering industry(11.61%,13/112)was the highest of all sampling sites.The detection rate of pathogens in Baishui County(11.11%,3/27)was the highest of all detected counties.The detection rate of pathogens in the second quarter(16.67%,15/90)was the highest in different sampling time.Conclusion Many kinds of market food in Weinan in 2017 were contaminated by various food-borne pathogens.It is suggested that relevant health supervision departments should strengthen supervision.
