摘要
以大豆皮为原料,研究了酸法制取大豆皮可溶性膳食纤维的工艺条件。在单因素实验的基础上,通过正交实验优化工艺条件,得到的最优工艺条件为:pH 2.0,提取温度90℃,料液比1∶20,提取时间2.0 h,乙醇沉淀比例1∶4。在最优工艺条件下,大豆皮可溶性膳食纤维得率为12.49%,纯度为60.13%,蛋白含量为18.33%。
The process conditions of soluble dietary fiber from soybean hulls by acid hydrolysis method were studied. On the basis of single factor experiment, the optimal process conditions were optimized by orthogonal experiment as follows: pH 2.0, extraction temperature 90℃, solid-liquid ratio 1∶20, extraction time 2.0 h, ethanol precipitation ratio 1∶4. Under these conditions, the yield of soluble dietary fiber was 12.49%, the purity was 60.13% and the protein content in the product was 18.33%.
