摘要
谷胱甘肽作为一种生物活性三肽化合物,具有清除自由基、解毒、抗过敏等生理功效。本文对谷胱甘肽在肉类储藏、调味品添加、防止酒类和蔬果的褐变等食品加工领域以及在肝病、肾病、病毒感染治疗等医药领域上的应用研究进行阐述,为谷胱甘肽的广泛应用奠定基础。
Glutathione,as a kind of bioactive tripeptide compound,has the physiological effects of scavenging free radicals,detoxification and anti allergy.In this paper,the application of glutathione in food processing fields such as meat storage,seasoning addition,prevention of browning of wine,vegetables and fruits,as well as the application of glutathione in the treatment of liver disease,kidney disease and virus infection were reviewed,which laid a foundation for the wide application of glutathione..
