湖北蒸菜文化的传承及产业发展

摘要 湖北蒸菜文化历史悠久,社会影响深远,但近些年来亮点不多,发展后劲不足。鉴于这一状况,本文对湖北蒸菜的风味特色和文化传承进行深入研讨,剖析影响湖北蒸菜传承发展的主要因素,遵循菜品创新发展基本原则,依照湖北蒸菜工艺创新实践提出蒸菜产业化发展构想,希望能推动湖北蒸菜快速健康发展。 Hubei steamed vegetable has a long history and far-reaching social impact,but there are few bright spots and lack of development potential in recent years.In view of this situation,this paper conducted an in-depth study on the flavor characteristics and cultural inheritance of Hubei steamed vegetables,analyzed the main factors affecting the inheritance and development of Hubei steamed vegetables,and followed the basic principles of innovative development of vegetables,according to the innovation practice of Hubei steamed vegetable technology,this paper puts forward the idea of industrialization development of steamed vegetable,hoping to promote the rapid and healthy development of Hubei steamed vegetable.
