摘要
本文以氢化油脂加工食品为研究对象,通过提取油脂与油脂甲酯化方式萃取样品,在CP-Sil88毛细管柱上通过三级程序升温气相色谱法测定反式脂肪酸。结果表明,该方法拥有较低检出限与良好线性关系,回收率为84.1%~92.3%,与实际食品测试要求相符,准确性与稳定性较高,且食物中反式脂肪酸(TFA)异构体以t-C18:1、t-C16:1为主,含TFA含量较高,食品中普遍存在反式脂肪酸,消费者需要加以注意。
This paper mainly introduces the method of detecting trans fatty acids in food by gas chromatography.In the process of the study,hydrogenated oil processed food was taken as the research object.The samples were extracted by the method of oil extraction and lipid methylation,and the trans fatty acids were determined by the three-stage programmed temperature gas chromatography on the CP-Sil 88 capillary column.Results show that the method has low detection limit and good linear relationship,the recovery is 84.1%~92.3%,consistent with the actual food testing requirements,high accuracy and stability,and trans fatty acids TFA isomers in food by t-C18:1,C16:t-1 is given priority to,including the TFA content is higher,widespread trans fatty acids in food,consumers need to pay attention.
