摘要
鲜切佛手山药在空气中容易被氧化而发生褐变,影响其色泽与品质,针对这个问题进行了鲜切佛手山药的护色工艺研究。以佛手山药为原料,采用柠檬酸、氯化钙、D-异抗坏血酸钠为单因素进行实验,结合响应面法确定鲜切佛手山药的最佳护色条件。结果表明最佳护色条件为:柠檬酸浓度1.50%、氯化钙浓度0.50%和D-异抗坏血酸钠浓度0.80%,在此护色条件下,鲜切佛手山药的总色差值(△E)为1.74±0.01,与响应面预测值(1.73)接近,护色效果较好,可以有效防止佛手山药在后续加工中发生褐变。
Fresh-cut Foshou yam is easy to be oxidized in the air to browning,which affects its color and quality.Using citric acid,calcium chloride and D-sodium erythorbate as single factors,the optimized color protection conditions was determined by response surface method.The results showed that the optimized color protection conditions was 1.50%citric acid,0.50%calcium chloride and 0.8%D-sodium erythorbate.Under this conditions,the value of total color difference(△E)of fresh-cut foshou yam was 1.74±0.01,which was close to the predicted value(1.73),showing a good color protection effect.After the color protection,the browning of fresh-cut foshou yam could be prevented effectively in the subsequent processing.
