摘要
民国时期是酿酒业发展的重要时期,对当今酿酒业发展有直接的影响。本文分析了高粱的产量、食用率以及高粱酿酒在白酒中的占比,以此为基础测算出抗战各年全国的高粱酒产量,其年度平均值为34267千市担,其中国统区高粱酒产量为5460千市担。我们又测算出高粱酒占全部酒类的比重约为55%,从而测算出国统区酒类总产量平均为9927千市担,全国所有酒类的产量为62303千市担,国统区酒类产量远远落后于非国统区。最后又与四川酿酒业的数据进行适当对比,四川高粱酒产量占了国统区的45%,成为国统区酿酒业的绝对主力,并为抗战胜利做出了税收、医用酒精、国防动力等方面的贡献,还为其解放后成为全国知名产酒大省奠定了坚实的基础。
The Republic of China Period is important in the developing process of liquor making industry and has direct impact on current development of liquor-making industry.This paper analyzes the production of sorghum,the consumption as food,the rate of sorghum white spirit in Chinese liquor.Based on the analyzing,the writer estimates the yearly national production of sorghum-white spirit during the Anti-Japanese War,the average of production is 34,267 kilo-Shidan(an old Chinese unit of weight;a Shidan equals to 50 kilograms),and within it,the yearly average of production is 5,460 kilo-Shidan in Kuomintang controlled areas,the rate of sorghum-white spirit almost reaches up to 55%,and the total yearly average of Chinese liquor production is 9,927 kilo-Shidan(the whole nation's production of it is 62,303 kilo-Shidan)in Kuomintangcontrolled areas.It means that the production in Kuomingtang-controlled areas is far behind the non-Kuomingtang controlled areas.The final studies on the properly comparing those figures with Sichuan liquor-making data.The production of Sorghum-liquor in Sichuan accounted for 45%of the total in Kuomintang controlled areas and absolutely dominated the liquor-making industry in Kuomintang-controlled areas,it made great contribution to the tax,the medical alcohol and the national defence,and also set up a solid foundation for Sichuan becoming a famous liquor-making province in China after liberation.
