摘要
黑小麦中蛋白质、矿物质、膳食纤维和活性物质的含量比白小麦高,具有独特的营养和保健功能,属于重要的黑色谷物资源。黑小麦发芽后富含更高的酶活力、更丰富的营养物质和活性物质,具有特殊的营养价值和药用价值。对黑小麦及其芽类制品的加工现状及应用进行了综述,并对未来发展方向进行了展望。
Compare to common wheat,black wheat has a higher content of protein,minerals,dietary fiber and antioxidative substances.So black wheat,belongs to the important black grain resources,has the unique nutrition and health care function.Black wheat malt has higher enzyme activities,contains more nutrients and active substances,compared with black wheat.The triticale and malt become popular because of their nutrition and medicinal value.In this paper,the processing status and application of black wheat and its malt products were reviewed.And the future development direction was prospected.
