摘要
山楂不仅营养丰富,还具有极高的药用价值,是重要的药食两用食品。综述了山楂黄酮类、三萜类、原花青素、有机酸、糖类、色素等活性成分及其功能性,以及山楂的开发利用现状,旨在为山楂资源的研究及开发利用提供一定的参考依据。
Hawthorn is not only rich in nutrition,but also has high medicinal value which was an important food for both medicine and food.This paper reviewed the utilization status and active ingredients such as flavonoids,triterpenoids,proanthocyanidins,organic acids,sugars,pigments and their functions of hawthorn,which aimed to provide a certain reference for the research and utilization of hawthorn resources.
