摘要
以芥菜籽活性成分的制备测定过程为研究对象,并对芥菜籽活性成分的抗氧化特性进行评价。芥菜籽的活性成分主要包含硫代葡萄糖苷、多酚和异硫氰酸酯;利用氧化性离子清除率和细胞存活率特性指标对活性成分的体外抗氧化性及细胞抗氧化性进行评价,表明芥菜籽活性成分具有良好的体外离子还原能力,同时能够作用于细胞体,促进细胞代谢生长,增强细胞抗氧化性。
In this paper,the preparation and determination process of the active components in mustard seeds are studied,and the antioxidant properties of the active components in mustard seeds are evaluated.The active components in mustard seeds mainly include glucosinolates,polyphenols and isothiocyanates.The antioxidant activity in vitro and cell antioxidant activity of the active components are evaluated by oxidative ion clearance rate and cell survival rate.The results show that the active components of mustard seeds have good ion reduction ability in vitro,and could act on cell body,promote cell metabolism and growth,and enhance the antioxidant ability of cells.
