摘要
通过对安曲过程中投入不同占比老草用于高温大曲生产的应用研究,结果发现在安曲试验过程中投入老草占比越大,发酵仓内升温、保温效果越好,挺温时间更长,半成品优级品率更高,香味成分及香味前体物质越丰富。高温大曲实际生产的安曲过程中增大老草投入量,更有利曲药品质的提升。
We have studied the application effect of used straw of different proportions in the production of high-temperature Daqu.The results show that,during cultivation period,the larger proportion of used straw be adopted,the better temperature rise effect and the longer temperature maintenance time in the cultivation chamber are achieved;the high-quality rate of the semi-finished product is higher,and the aroma components and precursors are richer.It is proved that by increasing the proportion of used straw in the cultivation period of high-temperature Daqu,the quality of the produced Daqu can be improved.
