摘要
研究佳木斯市本地企业生产白酒的质量情况。对佳木斯市辖区及周边市县(富锦市、同江市、桦川县、桦南县)的白酒生产企业、商场、超市及食品零售商店随机抽取106份白酒样品,按照国家标准方法对白酒理化指标、铅,甲醇等进行检测分析。结果表明,总酸、总酯、铅、甲醇项目参数全部合格;乙酸乙酯、己酸乙酯,酒精度均有不合格情况,检出率分别为13.2%、1.9%、17.0%。本研究的白酒中安全指标全部符合国家标准,部分理化指标存在不符合问题,建议制定适合本地白酒规范及地方标准,保证本地白酒安全和质量,突出企业主体责任,减少监管盲区。
In this study we investigated the quality of Baijiu produced by local enterprises in Jiamusi.106 Baijiu samples were randomly selected from distilleries,shopping malls,supermarkets and food retail stores in Jiamusi City and its surrounding cities and counties(Fujin,Tongjiang,Huachuan and Huanan).The physical and chemical indexes,the content of lead and methanol,etc.of the samples were analyzed according to the national standards.The results showed that the total acids,total esters,lead content and methanol content of all the samples were qualified;the unqualified rates of ethyl acetate,ethyl hexanoate and alcohol content were 13.2%,1.9%and 17.0%,respectively.In conclusion,the safety indexes of the tested Baijiu samples were all in line with the national standards,while some physicochemical indexes were not qualified.It is suggested that local standards and regulations be formulated to ensure the safety and quality of local Baijiu,to implement the responsibility of enterprises,and to reduce the blind area of supervision.
